Ingredients

  • Kidney Beans ( 2 cans )
  • Black Beans ( 2 cans )

  • Chili Beans ( 2 cans)
  • Canned Corn ( 1 can )
  • 1 Green Pepper
  • 1 Red Pepper
  • 1 Onion

  • Garlic
  • Vegetable Broth
  • Cilantro
  • Salt
  • Pepper
  • Pasta Noodles
  • 1 Chili Seasoning ( 1 bag )

Best Vegetarian Chili

Just wait till you give this AMAZING vegetarian chili a try. I know ….. I said the V word, but trust me this is one recipe you wont need the meat for!

Step 1) Go ahead and get a fairly large pot and put it on the stove, and add the kidney, black, and chili beans along with the corn. Make sure a use all the liquid from the beans, because it will add some extra flavoring. ( but strain the corn )

Step 2) Add the vegetable broth to the pot filling it just enough to cover over the beans and add about an inch.

Step 3) While the beans and broth are heating now is the time to cut the peppers. Take the red and green peppers and dice them in the small bits, along with the onion as well. Then add to the pot.

Step 4) Now you want to bring out a smaller pot and start cooking your pasta. I used a spiral pasta, but the option is totally up to you.

Step 5) While the pasta is cooking, add a little less than one TBS of garlic.

Step 6) Once your pasta feels like is is fully cooked, drain the noodles and add the into the larger chili pot.

Step 7) Add your one packet of chili seasoning, salt and pepper.

Step 8) For a little extra flavor and color I like adding cilantro. Go ahead and chop it up and spring it on the top.

Step 9) Now make sure everything is well mixed, and let it warm up on medium heat until desired temp.

Step 10) For the best step of all…. EAT! I always serve mine up with some cheese and cornbread.
